Marinated herring in buckthorn

Ingredients for 4 persons:

4 white marinated herring fillets
3 dl vinegar
150 g soft brown sugar
150 g of sugar
2 bay leaves
10 black peppercorns
1 tsp. dried coriander
2 star anise
1 shallot in slices
1 carrot in strips (julienne)
100 g of sea buckthorn berries

Procedure:

Cook it all in a saucepan until the sugar has melted. Cool the cure, when the cure is completely cold, place the herring fillets into the cure so that they are completely covered.
Leave the herring in the cure for 4-5 days before enjoying it. For this, a Skagen sea buckthorn bjesk must be enjoyed.
