Marinated herring

with Skagen crowberry bjesk

Ingredients for 4 persons:

4 white marinated herring fillets
3 dl vinegar
150 g soft brown sugar
150 g of sugar
2 bay leaves
10 black peppercorns
1 tsp. dried coriander.
2 sun-dried tomatoes
1 red onion in slices
100 g of crowberries


Cook it all in a saucepan until the sugar has melted. Cool the liquid down, once the liquid is completely cold, place the herring fillets into the liquid, so that they are completely covered. Leave the herring in the liquid for 4-5 days before enjoying. For this, a Skagen crowberry bjesk must be enjoyed.
