Matie (maatjes)
With toast Melba and herb cream
Ingredients for 4 persons:
1 maatjes
2 tbsp. crème fraiche 38%
2 tbsp. mayonnaise
dill
thyme
Parsley
Chives
1 clove of garlic
½ shallot
Lemon juice
Light bread
Pickled cranberries
Procedure
Cut the maatjes into smaller chunks and place them on top of the light bread. Creme fraiche and mayonnaise are to be stirred together in a bowl, finely chop herbs, garlic and shallots and stir into the dressing.
Save a little of the chopped shallots for garnish.
Stir everything together and adjust the taste with lemon juice and salt and pepper. For this, a Skagen perikumbjesk is recommended.
